If you've studied for an OSU final, met a client or just needed a quiet table on South Western, chances are you've done it at Aspen. In February 2023, Edmond Outlook profiled the Stillwater-born coffee company.
How did it get started?
In 1994, Matt Johnston and Kelly Lyda opened the first Aspen Coffee in Stillwater. Edmond Outlook calls it a pioneer of Oklahoma's craft coffee movement. The Fountain Square store opened in June 2005 because student demand had outgrown the original (O'Colly). In November 2015, a drive-thru at Duck and Maple became the fourth Stillwater shop (O'Colly, Nov 11, 2015).
What makes it different?
- Micro-roasted beans. Kelly Lyda, nicknamed "Fast Eddie," is the master roaster in Stillwater.
- Built for staying. The Fountain Square store has tall ceilings and room to spread out and study.
- Community first. In Matt Johnston's words, "we strive to create an overall experience at Aspen."
"Since there are so many really good local coffee shops in Oklahoma, we strive to create an overall experience at Aspen. We want to build relationships along with serving great coffee."
— Matt Johnston, to Edmond Outlook
Where are they now?
